Baby hake is one of my favourite fish varieties to prepare. It has a delicate flavour that pairs well with any starch or vegetable. It is absolutely delicious grilled with just a squeeze of lemon and some sea salt.
Due to the fact that it’s so delicate in flavour, just about any flavours can be added to it and usually works pretty well with it. Grilled fish served with flavoured butters are always a hit, as it add to the taste of the dish and doubles up as a sauce for the dish.
I made a red wine butter by simply reducing red wine and adding a few other flavours to the butter. It adds a lovely boldness to the baby hake, yet it’s not over powering. The butter can be melted slightly or served chilled on the hake. I melted it slightly – it looked more appetising on the plate. Always have some extra of the flavoured butter so your guests can help themselves to some more for their fish or potatoes etc.
