I love a good tea cake. And by tea cake I refer to a cake that has great flavour and can be served fairly plain. Not too many frills, but goes really well with a good cup of tea and does not leave you feeling sick and stuffed.
This banana cake is the perfect tea time cake. It’s not rich, but it’s moist with incredible flavour. Banana is just one of those magical ingredients that work so well in cakes. It adds moisture and flavour instantly and any cake or loaf containing banana, is sure to last quite a while.
As you’ll see in the recipe, banana chips can be added on top of the batter before baking the cake. I do this if I plan on not frosting the cake. It adds a nice finish to the cake and some texture, too. If you do want to frost the cake, use a good cream cheese frosting – it goes perfectly with the banana cake. Decorate the frosted cake with banana chips and drizzle with extra honey before serving. If the cake is kept covered it can last for a few days. If there is still cake left over and it starts going a bit stale, serve it lightly toasted with mascarpone or chocolate spread for breakfast! I’ve done it before and it’s a definite hit.
