Whole orange segments or wedges are added to the salad, so fresh orange juice can be squeezed over each bite as the salad is being enjoyed. It makes the dining experience quite interactive and fun. Orange and macadamia pair extremely well and add lovely dimension to the clean, simple flavour of beetroot.
If macadamia oil is not available, make use of either avocado oil or blend sesame oil with a little olive oil. You need a hint of nuttiness, nothing to overpower the flavours. A simple vinaigrette will work fine too.
