I love the flavour of black cherries and what they bring to the recipes they’re added to. A Black Forest cake is so simple in essence, but think of the beautiful combination of flavours. Chocolate, soft, airy cream, and cherries. And don’t forget about the Kirsch! That wonderful cherry liqueur.
I made a cheesecake and decided to add a little Black Forest to it. I didn’t add Kirsch, because it was too late when I decided to make the cake like this. But if you have some Kirsch in the kitchen, it can be added directly to the cheesecake mixture before baking. It will add amazing flavour to the light, creamy texture of the cake. I also thought about it afterwards – some of the cherries can be chopped and added to the mixture before baking, but it’s not necessary if it doesn’t appeal to you.
Make this cheesecake the day before and only assemble and decorate it before serving. I made it in individual, rather deep, tart tins. They look pretty when served like this, even though it takes a little more time to bake them in this style. Use lots of ganache to decorate the cake and the plate. Make sure you use a good quality chocolate for the ganache.
