What better way than to end a lovely meal than to indulge in some cherries soaked and steeped in your favourite brandy. Chef Billy used beautiful dark red succulent cherries from Woolworths in Bayside Centre, Tableview. Seasonal cooking certainly is all the rage at the moment as it is a responsible way of eating and supporting local producers while also limiting your personal carbon food print. Cherries are freely available this time of the year. If you can’t find cherries please feel free to substitute them with any berry of your choice.
Billy caramelized stoned cherries in a brandy, orange juice and sugar combination to top fluffy clouds of hot cakes served with creamy dollops of marscapone.
