If you’ve never eaten Cajun seasoned food, this chicken sandwich is a good way to try it for the first time. Cajun food is spicy and flavourful – it leaves your palate with a tingling, satisfied sensation. There are many premixed Cajun seasonings available at supermarkets and delis, but it can also easily be mixed in the kitchen. I usually combine equal parts ground paprika, cumin and coriander then add some dried oregano, cayenne pepper and dried chilli flakes. This mixture can be stored in an airtight container and used as needed.
It’s divine with chicken and fish, but can be used with vegetables and other meat too. It adds incredible depth of flavour to any food and it’s most certainly one of my favourite spice mixtures to use.
I made gorgeous grilled Cajun chicken sandwiches during the Kitchen.net pop-up demonstration period at Bayside Mall, one of the local shopping centres. Woolworths sponsored all the ingredients that we used during this time and I have to say that working with a company that’s so enthusiastic about quality, made my job of preparing good food, very easy. I added perfectly ripe avocado to fresh ciabatta and topped it with Cajun chicken, watercress and cashew nuts.
