These days you get tortilla chips at just about any and all supermarkets and grocery outlets. If you can’t get hold of any it’s quite easy to tear a few tortillas into chunks and bake it for a few minutes in a moderate oven until crispy. There’s also many good quality spicy tomato sauces available, but it’s so easy to make your own by frying a little garlic and chilli in olive oil. Add a tin or two of peeled tomatoes and allow it to simmer down until thick and intense in flavour. Adjust the seasoning before serving.
Use a good quality melting cheese and make use of ripe, unblemished avocados. Don’t forget to have a few lemon wedges on the side as the flavour of lemon lifts and marries all the flavours together perfectly.
