This tea loaf has the most amazing flavour with the perfect crumb, if mixed correctly. I’m always checking the crumb of baked items and when I spot that perfect, fine and light texture of a cake or other treat, it’s game time. You know it was baked by either a professional or someone that cares enough to take the time to prepare it correctly.
This cherry loaf came out of the oven with a hypnotising smell and I was quite impatiently waiting for it to cool. It looks so pretty with the rich, buttery colour and red cherries. The crumb was probably the best I’ve seen in a long time. My colleague was laughing at me for carrying on and on about the perfect texture.
Serve the loaf at tea time with a big dollop of sour cream to off set the Morello cherries which also have a slight acidic flavour. It’s all just perfect, really.
