While berries are still in season and fairly affordable, I like to make use of them as much as possible – incorporating it in salads, dressings, savoury dishes and desserts. Fresh berries have a magical way to liven any plate or bowl. Like little jewels they add colour, attraction and sophistication. And it’s so hard not to add a punnet to the basket while shopping as it makes for such a yummy nibble.
I made sweet and chewy coconut slices with a biscuit-like base, berries in the middle and crispy coconut topping. In the middle I’ve spread strawberry jam and scattered chopped, fresh strawberries. The jam kind of bakes into the biscuit base and the coconut topping while the fresh strawberries add a sweet, yet slightly tart and juicy dimension to the slices.
Not only will these slices be great with a cup of tea, but with a scoop of vanilla ice cream, they’ll make for pretty decent dessert feasting.
