Courgettes are the ideal vegetable to add to things like muffins, loaves and cakes. Often they are forgotten and people only turn to carrots, but the flavour and moistness courgettes add to baked goods are stunning. I often add grated courgettes to muffins for a wholesome mid-morning snack.
Courgettes can be paired with just about any other ingredients – chocolate, spices, honey, bananas and other fruit. I’ve once, a long time ago, have the most glorious slice of chocolate and courgette cake. I still remember every single bite of that cake. I’ll definitely be trying my hand at a version of something similar.
Courgettes are low in calories and contain decent amounts of vitamin A, potassium and folate which just add to the reasons why we should be making use of them in cooking and baking more often!
This tea loaf I baked is packed with flavour as I’ve added ground cinnamon and pecan nuts. The recipe can also be used to bake muffins – which will be perfect for lunch boxes or to add to a weekend brunch table.
