Tinned crab is readily available at local supermarkets and can really make life quite easy. It’s not that expensive if you look at all the hassle of cooking a crab and flaking out the meat that you’re spared. I often buy tinned crab and use it for special occasions as it has quite a special and distinct quality to it.
The flavour is quite delicate and works well with other delicate flavours. Things like French tarragon, Dijon mustard, chives, spring onions and parsley are all excellent partners for crab meat. Crab can be used in savoury tarts, salads, curry and so much more. It’s really tasty in an omelette with some mascarpone and fresh herbs.
I prepared tartlets with crab and chives – divine little tarts! The chives and crab meat are a perfect match and a hint of Parmesan heightens the the entire taste experience. These tartlets are excellent as a light lunch with fresh salad.
