This is a wheat-free version of the old fashioned date balls, omitting the Marie biscuits and replacing it with rice crispies and using sweet molasses instead of sugar. Adding butter instead of margarine gives it a creamy and satisfying flavour. I also whipped in some walnuts and an egg for extra protein, as my batch was meant as an after dinner treat as well as a lunchbox snack for the kids the following day. My 4 and 7 year old had such fun rolling the balls in sesame seeds and shredded coconut. A kid friendly recipe, begging for participation!
