Gluten free baked goods are often stodgy or sometimes quite dry. These cupcakes are the complete opposite – lovely texture and they taste divine! The combination of fresh strawberries and coconut give them almost an exotic, tropical kind of flavour. I had two before they were even frosted!
If fresh strawberries aren’t available, mixed frozen berries can be used instead. It will still taste really great. I think chopped pineapple won’t be too bad either… coconut and pineapple is always a winning combination.
Gluten free self-raising flour is now available at most supermarkets and delis – just look right at the top of the flour shelf or right at the bottom. And if you can’t find it – askthe assistants. If enough people ask it won’t be long before the store will stock it!
