Easy beans, the Mexican way
Everyone has a tin or two of baked beans in the cupboard, right? So the next time you are in a rush and have no idea what to make for supper, grab a few tortillas and an avocado or two from the shop and supper is just about done!
I love making these spicy beans just because it’s so easy and super fast to prepare. The spices give the dish warmth and lots of depth. I like it quite spicy, but you can adjust the cayenne pepper to your taste and your family’s preference. I’ve added grilled ham to this recipe, but it can be served with chicken, bacon, prawns or just plain. Sour cream is lovely with the spicy beans, but if you prefer you can also serve it with plain yoghurt.
