This is an easy salad with simple ingredients, but the flavour is just perfect. It kind of stirs the thought of summer just lying around the corner. The boiled beetroot can be lightly roasted if you have the time to do it, but it’s not crucial to do this. If you’re not a big fan of goats cheese, use a creamy blue cheese instead or even bocconcini will be very nice in this salad.
I used pumpkin seeds to add a little texture, but other nuts like cashews or even caramelised pecan nuts will be lovely too. That’s what I love about this time of the year and preparing salads, just about anything goes and no flavour have to be restricted.
