Hollandaise is a delicious and rich emulsified butter sauce made with egg yolks and flavoured with vinegar and lemon juice. It is atricky process and many people avoid preparing it, but this method is a quick and easy way to make it and it tastes just as good as the real thing!
Blend the egg and vinegar mixture until light and frothy. Then add the hot butter slowly while continuously blending. The sauce will thicken significantly. Add a squeeze of lemon juice, a dash of tabasco and season with a pinch of salt. Serve the sauce immediately or keep it warm by placing the jug in a larger bowl with hot water. Stir every now and then until ready to use.
