Simple recipes always catch my eye as I’m sure you will agree with me, there’s nothing nicer than being able to whip up a dish or dessert in minutes, with minimal effort and still have your guests be majorly impressed by what you’re presenting.
This recipe was inspired by something I saw on Twitter the other day. Someone said something about how tasty the 2-ingredient ice cream is that she makes using only bananas and peanut butter. Well, I’m all for simple and immediately played around with ingredients and quantities. Simply using banana and peanut butter makes a tasty ice cream in minutes, but with minimal effort and one or two extra ingredients, you could have a really great ice cream that can still be whipped up in minutes.
I added vanilla essence to frozen bananas and peanut butter. The vanilla enhances flavour and almost lends a more sophisticated taste to the ice cream. Peanut brittle works great as a garnish, but you can also mix crushed peanut brittle into the finished ice cream before serving. It adds lovely texture and caramel flavour to the over-all ice cream.
This ice cream recipe is so simple and also completely vegan, by the way! it can be prepared in a larger batch and kept frozen. Simply take it out of the freezer for a few minutes before planning to serve.
