Do you need some mid-week inspiration for dinner? Look no further as this tomato soup is super easy and so tasty!
Pop a punnet or two cocktail tomatoes with lots of fresh garlic into an oven tray and into the oven. A hot oven works best to flash roast the tomatoes for only a few minutes. Then simply bring the tomatoes with some stock to a boil. Swirl in a little cream and break the sourdough bread.
This soup can be served smooth or slightly chunky – it tastes really great either way. I like to deep fry some basil or oregano sprigs to use as garnish. It adds lovely texture and extra flavour.
