I have a few vegetarian friends who aren’t fussy about their diets and never make it an issue when they are out for dinner, but it’s still nice to try and accommodate them when they do pop in for a visit. Everyone loves a good burger, right? Well, these mushroom burgers are a hit with vegetarians and non-vegetarians alike. Slow braised onions add an intense flavour to the meaty texture of the brown mushrooms. I like to add hummus which brings some extra earthiness to the burger and avocado adds a little creaminess.
Remember to put ingredients like fresh lemon, herbs and spices to good use when preparing vegetarian dishes, as no one will appreciate a dull plate of food!
