Coconut ice is just one of those all time favourite sweet treats that are easy to prepare and even easier to serve. It brings a smile on the faces of young and old. I know I have fond memories of enjoying coconut ice as a child and even fonder ones of the times we, as kids, were allowed to make it ourselves. The colour combinations were enough to send chills down any pastry chefs back!
Today I still enjoy preparing coconut ice – sometimes with really bright and happy colours, other times soft colours, but still happy. Flavours are slightly more adult inspired, but every now and then it’s really pleasing to just indulge in a batch of simply too sweet coconut ice that has no other flavour depth than the condensed milk and coconut.
The recipe I’m sharing now, however, is definitely not plain in flavour. I added lots of fresh lime zest and a generous pinch of ground ginger – it made for a lovely after dinner sweet. One block hits the spot and the ginger flavour lingers every so slightly. This is a good recipe to give a go sometime.
