Friands! Friands! Friands!
I made a batch of friands again. I can’t help myself – they are just so good! I used the same base recipe as my original friand recipe, but added lemon zest, fresh lemon juice and dessicated coconut. I love coconut. It’s one of those ingredients you’ll either love or hate. There’s usually no in between. it just adds such a different flavour to food or baked goods and the texture is lovely. Coconut pairs well with citrus, so naturally these friands are fantastic. Well, I think they are.
I was also busy with a carrot cake at the same time, so I topped the friands with a smidge of cream cheese frosting, which worked well, but friands are perfectly fine without any icings and frostings. Just a light dusting of icing sugar and voila! I love them – they are so nice for tea time. Just perfect!
