Here’s a easy, but truly nice recipe for an ice cream dessert. A friend of a colleague made this dessert and I must agree that it’s an excellent way of finishing off the last bit fruit cake lying (maybe a little forgotten, even) in the back of a dark cupboard.
All you need is some vanilla ice cream and whatever last piece of fruit cake that’s leftover from Christmas. Allow the ice cream to soften outside the freezer for a few minutes and then fold pieces of fruit cake in. Scoop it back into the container and pop it back into the freezer. Easy peasy!
