Potato gnocchi is easily one of the essential items on my grocery list every month. There are a few good quality brands of pre-made gnocchi available from supermarkets and delis these days. I also like the fresh gnocchi available form Woolworths Foods – the price is nothing compared to the effort being spared.
About 2 years ago I discovered the incredible flavour of gorgonzola cheese. It was in a gnocchi dish at the most amazing little Italian restaurant in Cape Town. It just shows again that you don’t always need a gazillion ingredients and flavours to make a good dish. Good quality blue cheese, good quality potato gnocchi and a grinding of black pepper – perfect dinner! Gorgonzola is an Italian blue veined cheese. It is more than often slightly soft, quite creamy and has a salty taste with pronounced flavour. You don’t need too much to add punch to a dish.
I love making gnocchi with gorgonzola sauce – it’s simple and very tasty. I like to add a sprig of whole fresh rosemary just to flavour the cream, then I remove it when I add the gnocchi. It pairs so well with the blue cheese. It’s just divine!
