The other day I was searching for raspberries in all the shops, but to my despair couldn’t find anything. I was planning to make raspberry and lime ice cream, but it had to wait as I found one abandoned little punnet of gooseberries. As I stood in the kitchen I thought about a few things I could do with the gooseberries, but a packet of ground almonds caught my eye and an instant decision was made – FRIANDS!
Friands are those delicious little oval cakes, consisting of more butter and ground almonds than anything else. They are quite similar in texture and flavour to financiers – which are rectangular cakes resembling bars of gold.
Mixing a batch of friands are incredibly quick and easy. They are also versatile with flavours, that’s why I chopped the gooseberries roughly and added it together with grated white chocolate to the batter. Like I’ve said before, white chocolate can be paired with just about all fruit, so you can imagine how delicious these friands tasted. They are also so easy to decorated as half their appeal lie in their shape, therefor a splash of melted white chocolate and a few extra gooseberries did the trick in a flash.
