I’m not the biggest meat eater, which can become an issue over this festive period of the year. Like most South African families, our food over the festive season consists of large cuts of meat, roasts and a lot of braai-ing! But lucky for me, one of my aunts is excellent with salads. She always comes up with the most intriguing combinations and she loves using the produce of the season. So ingredients like fresh berries, nectarines, asparagus etc. are always part of the mix. It makes me happy to stand in front of of an entire spread of meat and then right there next to it, there’s like four or five delicious and interesting salads, waiting to be tucked into!
I made a salad to follow in the custom of my talented aunt. A bright and vibrant combination of beans, nectarines, gooseberries and toasted almonds. Give the beans a quick blanch just to take the edge off and instead of gooseberries, fresh raspberries will be pretty amazing in this salad, too. The toasted almonds add a lovely nuttiness to the overall taste and don’t worry about dressing. Simply squeeze some fresh lemon over and add a generous drizzle of extra virgin olive oil. The ingredients lend so much flavour to the dish on their own that the peppery flavour of the olive oil is all that’s necessary.
