I am quite the Dr Suess fan and have always been keen on the idea of green eggs and ham. In the same breath I also have to mention that I don’t really like messing with food too much. So, when you search the wide web, you’ll come across various ideas on how to prepare green eggs; making use of food colouring etc. This is not what I had in mind when I first thought of preparing green eggs and ham. So, I made a different version of the fictional dish.
It’s a lovely breakfast type of dish, especially if well made sourdough types of bread is used. I like to use rye when I prepare this dish. My “green” part in the dish is simply avocado. It might be cheating, I know, but in preparing it like this, it mean the dish remains a decent dish that doesn’t put one off from eating it.
Add a generous spreading of English mustard – it gives a hearty bite to the dish. Fried eggs, instead of poached eggs, can be used and if you’d prefer bacon instead of ham, go for it!
