The combination of mango and pineapple is quite a sunny one. Every spoonful is like biting into sunshine and when the two fruit are combined with honey, chilli and mint, that bite of sunshine transforms into an island vacation!
There’s never a good reason to serve dull chicken. It’s incredibly easy to add appeal to simple chicken by just using what you have in your cupboards. Make use of spices, herbs (dried or fresh), lemon and other fruit. Fruit spreads and Asian ingredients can all be put to good use to add plenty flavour and character to any chicken dish.
I mixed olive oil with lemon juice and peri peri spice, then spread it over chicken breasts and allowed it to soak up the flavours. While that was happening, I prepared a quick and easy salsa, combining mango, pineapple, mint, honey and a dash of soy. Once the chicken was grilled to perfection, the salsa was all it needed make the perfect light lunch.
