Some people like having all the family over on Christmas Day so having to feed a whole lot of people on Christmas morning might be quite messy!
If quite a few people are coming over for breakfast, these little brekkie cups are perfect to serve. They are easy to prepare and a large number can be made at the same time. Preheat the oven to 190°C and light spray a muffin tin with non-stick spray. Place a slice of smoked ham into each muffin hole then scoop a tablespoon sour cream with chopped parsley into the bottom. Break an egg or two over the sour cream and add another tablespoon sour cream. Sprinkle with some salt and pepper then pop the tray into the oven for about 12 – 15 minutes. Serve the brekkie cups with fresh sourdough bread and some whole grain mustard.
