Talk about the perfect indulgent breakfast – what can be better than freshly made fluffy hotcakes served with gorgeous wood-smoked bacon, banana and maple syrup. I’m talking lots of bacon and dripping with maple syrup…heaven!
Hotcakes are so easy to prepare – it’s almost a staple Saturday morning breakfast in my house. The fun part is the accompaniments – they change every Saturday. Although, I must admit, bacon is quite a recurring ingredient. I’m especially fond of wood-smoked bacon – it has the most amazing flavour which lingers just a little longer than regular bacon. The kitchen is also filled with an alluring aroma when cooking wood-smoked bacon. Anyone that’s still sleeping is soon up and pulling a chair closer to the table.
Maple syrup and bacon is a winning combination – the distinct flavour and taste of sweet maple syrup balances well with the smoky, saltiness of bacon. It’s not necessary to add banana to the mix, but its tropical flavour ties it all together in a lovely way. These hotcakes are a definite hit, every time!
