Cheese platters are far more than just a plate with a few pieces of predictable cheese on it. A cheese platter can be the perfect ending to a lovely dinner or it can work as a nice snack platter for a gathering of friends around a big table. Make it interesting by adding spicy nuts, caramelised nuts, preserved fruit and even fresh fruit.
A nice idea is to caramelise some castor sugar in a frying pan, then dip fresh cherries in the caramel. Allow the cherries to set before adding them to cheese like camembert or blue cheese. An impressive, but fairly simple finish to a cheese platter is spun sugar. It only takes once or twice to get it right and then there’s nothing to it.
Add interesting crackers and flavoured breads to jazz up the platter.
