It’s dead easy to make your own almond paste to use in things like almond croissants, pear tarts or with fruit cakes. A large quantity can be made and kept in the fridge for up to a month.
Place 200 g ground almonds and 100 g icing sugar in a food processor. Blend the mixture for about 30 seconds then pour it into a large bowl. Add 1 egg white and 1 ml almond essence. Mix the paste until everything is well combined. If it is too dry, add more egg white. Other flavours like orange zest, vanilla or rose water can also be added. Keep the paste in the fridge and if it is too dry when you need to use it, add a little hot sugar syrup.
