Arrabbiata is an Italian pasta sauce prepared with tomatoes, garlic and chilli. It literally means “angry” and this refers to the bite of the chilli in the sauce.
Heat about 50 ml olive oil in a heavy based saucepan and saute 2 chopped cloves of garlic. Add 2 tins of whole peeled Italian tomatoes before the garlic browns. Add 2 chopped chillies and bring the sauce to a gentle simmer. Allow to reduce until it looks like the oil separates from the tomato sauce then add salt, a pinch of sugar and some oregano or basil (or both!). Serve the sauce with your favourite pasta or keep it in a jar in the fridge.
