Summer berries are great in desserts, but they also add lovely flavour to salads and salad dressings.
Make a refreshing blackberry dressing by placing 30 ml red wine vinegar, 90 ml olive oil, a pinch of salt and pepper into a screw cap jar. Add about 5 blackberries and lightly crush them into the other ingredients, using a fork. Screw the cap on and shake vigorously. Allow the dressing to stand for about an hour to infuse then shake it up before serving.
