Salsa is such a lovely, fresh accompaniment to just about any dish, It goes really well with spicy food and it’s a great plate filler. It can be prepared in a chunky way, like here, or all the ingredients can be finely chopped. Serve it the way that works best for you.
Slice the chilli lengthways and remove the seeds. Then finely slice it. Add it to the cucumber and tomatoes. Season with pepper and add a good tablespoon or two olive oil. Squeeze half a lemon’s juice over the ingredients and mix well.
