Lately courgettes have been receiving a lot of attention and it’s easy to spot why. Courgettes are so versatile and can easily be used in just about anything, from cakes to vegetable bakes to low carb high fat dishes.
Another way to enjoy it, is to slice courgettes thinly, place it in a large bowl and drizzle with enough olive oil to just coat the courgettes. Add salt, pepper and a generous sprinkle of paprika. Scatter the seasoned courgette slices on a non-stick oven tray and bake it in a hot oven of 180°C for about 25 minutes. After about 12 minutes, remove the tray from the oven and give it a shake to move the courgette slices around. Place it back in the oven and continue baking.
After about 25 minutes the courgette slices should be crispy and ready to be taken out of the oven. If not, allow it to bake another few minutes until crisp. Serve the courgette crisps warm with a squeeze of lemon juice.
