Eggplant is so versatile and does not only work wonderfully in stews, but can be used as part of snack food.
Cut a few slices of eggplant, lengthways and brush with a little olive oil on both sides. Heat a large frying or griddle pan and cook the eggplant slices on both sides until soft and slightly browned. Place fresh basil leaves onto each slice and roll it up with a slice of feta. Secure the roll with a cocktail skewer. These can be prepared ahead of the time and kept in the fridge.
