It’s the perfect time of the year for ice cold drinks and there’s noting like a cool ginger drink to quench a summer thirst.
Take a medium saucepan and add the peel (no pith) of 1 lemon, 150 g sugar, 250 ml water, 2 cm fresh ginger (chopped) and 10 ml cream of tartar. Bring the mixture to a gentle simmer cook for about 3 minutes. Add the juice of one lemon then strain the cordial and bottle in sterilised bottles. Keep the cordial in the fridge for up to 2 weeks.
Serve ginger cordial with sparkling water and plenty ice or in your favourite cocktails.
