Mayonnaise is one of those magic sauces that make anything it’s served with taste 100 times better. Homemade mayonnaise is not that difficult to prepare and has so much more flavour than store bought mayonnaise.
Start by placing 2 yolks in the jug of a stick blender. Add 15 ml fresh lemon juice, 5 ml Dijon mustard and a pinch of salt. Blend briefly until frothy.
While blending, slowly add about 300 ml good quality olive oil. The sauce will become thick and glossy.
Add some chopped herbs and check the seasoning before serving.
