Making use of flowers from the garden is a great way to decorate pastries, cakes and desserts. It’s quite easy to crystallize flowers or flower petals to make it look more impressive and last a little longer as decoration.
To crystallize rose petals, dip each petal in whisked egg white then shake off the excess. Dip the petals in castor sugar on both sides and place it on a wire cooling rack to dry for about 45 minutes to an hour. Use the petals to decorate cakes or cupcakes.
