Onion rings make a very nice accompaniment to other dishes or even as a snack on its own with a sprinkling of flavoured salt and a squeeze of lemon juice.
Make a batter with 250 ml cake flour, 50 ml corn flour, pinch of salt, 200 ml soda water and 1 egg. Simply whisk it all together and allow the batter to chill in the fridge. Thinly slice an onion or two, dip it in the batter and deep fry the rings in hot vegetable oil until golden brown. Serve warm with extra seasoning.
