Pickling beetroot takes no effort whatsoever. It’s nice to have a couple of jars in the pantry to open up when friends pop in unexpectedly. It just fills the empty spot on a plate!
Boil a few beets until tender. Allow to cool then peel and slice the beetroot any which way you prefer and place it into jars. Fill the jars up with white wine vinegar and add a peppercorn and bay leave for flavour. Screw the lids on tightly and store for that rainy day!
