Couscous is a lovely and very easy to prepare starch. It can be served with grilled meat, fish, chicken, with stews and as salad. Just about any ingredients can be added to couscous to flavour it – dried apricots, pistachio nuts, almonds, citrus zest, fresh or dried herbs, spices, grilled vegetables, pulses and cheese.
To make enough plain couscous to serve two, take 125 ml dried couscous and place it in a medium bowl. Add some seasoning, fresh herbs and a knob of butter.
Add 125 ml boiling water into the bowl.
Cover immediately with cling film and allow to stand for 3 – 5 minutes.
Uncover and loosen the couscous with a fork. It can be eaten as it is or flavoured with ingredients of choice.
