Fresh artichokes are lovely to use in salads, on pizza, in pasta or even just to enjoy with lemon butter on it’s own.
Top and tail (trim the top and the bottom) of the artichokes. Don’t cut too much away, especially from the bottom as it has great flavour. Bring a pot of salted water to a simmer. Add a slice of lemon and blanch the artichokes for about 5 minutes until soft. Remove from the heat and refresh the artichokes in cold water.
Slice the artichokes open and use as desired or serve with lemon butter.
