When garlic is roasted slowly in the oven, it becomes soft like butter and sweet in flavour. It’s delicious in salads, with crusty bread or used to flavour mayonnaise.
Simply cut the top off the whole bulb of garlic and place the bulb in an oven proof dish. Drizzle about 30 ml olive oil over and into the bulb and sprinkle with a little salt. Cover with foil and roast at 180C for about an hour.
Allow to cool slightly before pressing the garlic out to use.
