It may look like a tricky thing to do, but with the right equipment, anyone can shuck an oyster.
First things first, check the freshness of the oyster – you’re looking for a fresh ocean smell, and a securely closed shell. Then grab a cloth in which the oyster can be safely held as the the shell has sharp edges. Insert an oyster shuck or a strong knife between the shells close to the part where the shells are “hinged” together.
Once the knife is in, give it a strong twist to separate the shells. Be careful not to cut yourself and also not to spill too much of the oyster liquid. Move the knife along the shell to loosen it. Then lift it off. Loosen the oyster in the shell with the knife – it makes it easier to eat the oyster. Once again try not to spill the oyster water.
To serve oysters, add a squeeze of fresh lemon juice, and some people also like chilli sauce.
