Leftover stews and curries make perfect pie fillings, so I always make sure I make big pots of stew or curry then there’s always extra to make a nice pie the following day. I often make use of regular store bought puff pastry to line the pie dish, but if there’s time I like to make a quick soda water pastry which works really well for pies.
Pies are so unpretentious and approachable. It’s comfort and happy food. I believe in making pie at least once a week. It’s a good philosophy to have.
