The mild, yet very distinct flavour of Dijon mustard in this dish is simply tantalising and is the ingredient that makes this salad so special. I used lamb fillet, which is a little more expensive to use, but really does make the dish. However, other cuts or even chops can be served with the salad.
Apart from the Dijon mustard, the gremolata also adds incredible flavour. Gremolata is a beautiful chopped parsley, lemon zest and garlic condiment. Can you imagine those fresh flavours added to anything? Taste explosion, my friends!
Another thing to take note of, this will make a delightful vegetarian salad by simply leaving out the meat. Or replace the lamb with grilled chicken if you’re not a red meat fan. I’ve had it with both and it’s excellent both ways!
