Lemon meringue is just one of those amazing desserts that most people simply love. Well, if it’s made the right way, it’s a pretty good dessert, hey. What’s not to like – rich and gorgeous lemon filling that hits you right in the sides of your cheeks with the first bite and vanilla meringue that has a slight crispness to it, but at the same time a soft marshmallow inside.
I made these beauties the other day for a fabulous friend in the office who was celebrating her birthday. They weren’t shared with anyone, but boxed up and off she took them with her. To home! The word came back that they were absolutely delicious and every last crumb was devoured.
I used sable pastry to line the tart tin. Sable is a lovely, light pastry that works really well with just about any sweet tart or pie. I always make a large amount of it at a time and keep it in the freezer for impromptu tart making afternoons. You should do the same!
