Yes, it’s all the rage and there are numerous opinions making the rounds at the moment about following a low carbohydrate high fat diet and I believe everyone has the right to have their own opinions. I’ve never been one to conform to strict or extreme eating plans. I find I’m a much happier (and friendlier) person when I can eat what I want and when I want, but I stick to the common rule of everything in moderation.
So, with all of that said, this courgette bake is a real diet wrecker, but not if you’re following a low carb high fat diet. It is absolutely divine with addictive flavour. It’s also a really simple recipe that takes no effort to prepare. Sliced courgettes are baked in seasoned cream with some sun-dried tomatoes and feta. I added fresh coriander which adds so much flavour. Italian parsley will do just as fine, or even fresh thyme will be quite tasty. I used sun-dried tomatoes and fresh cocktail tomatoes together with the courgettes which add a slight Mediterranean feel to the dish.
This dish can be served as accompaniment to grilled meat, chicken or fish. It’s an excellent side that will please any diner.
