Madeleines are a favourite around the globe, mostly because they are open to any flavour thinkable. The fact that they can be whipped up in minutes are probably the other treason they are so popular.
Spoil mom this Mother’s Day by baking her a batch of madeleines – we’ve flavoured these with delicate rosewater, but citrus works well and plain vanilla madeleines are divine, too. Don’t worry too much about a madeleine tin – if you don’t have one, simply bake them in a muffin tin. Don’t fill the muffin holes up with mixture, only spoon in about 15 ml of batter. They will still bake beautifully and taste delicious.
Serve them with tea of sparkling wine, but don’t keep them too long as they don’t last that well. That’s why we bake them in a jiffy whenever we’re in the mood for them!
